What is hanging weight, and how does it affect pricing?

Hanging weight refers to the weight of the beef after it has been processed (slaughtered, skinned, and gutted) but before it has been trimmed and packaged. This weight determines the cost of your beef purchase. On average, the final packaged weight is about 60-65% of the hanging weight due to trimming and deboning. For example, if you purchase a ¼ beef with a hanging weight of 150 lbs, you can expect about 90-100 lbs of packaged beef.

How much freezer space do I need for ¼, ½, or whole beef?

Here’s a general guideline:

  • ¼ Beef: About 4-5 cubic feet (equivalent to a small chest freezer).
  • ½ Beef: About 8-10 cubic feet.
  • Whole Beef: Approximately 16-20 cubic feet.

For reference, a standard upright freezer typically has 10-16 cubic feet of space, so a half or whole beef may require dedicated storage.

What cuts of beef will I receive?

The cuts you receive depend on the processing options you choose, but a typical breakdown includes:

  • Steaks: Ribeye, sirloin, T-bone, filet mignon, etc.
  • Roasts: Chuck, arm, rump, etc.
  • Ground Beef: Perfect for burgers, tacos, and more.
  • Other Options: Short ribs, soup bones, brisket, stew meat, and organ meats (if desired).

Do you offer delivery?

Yes! In the state of North Dakota, we deliver. We offer delivery options to certain areas for a small fee, or you can pick up your order directly from our ranch or local processor. For longer distances, we recommend arranging transportation in coolers to ensure freshness. Contact us to discuss the best delivery option for you.

How long will the beef last in my freezer?

Properly stored, vacuum-sealed beef can last up to 12 months in a deep freezer without losing quality. For the best flavor and texture, aim to use steaks and roasts within 6-12 months and ground beef within 4-6 months. Always keep your freezer at 0°F or lower to maintain freshness.

Can I customize my order?

Absolutely! One of the benefits of buying beef in bulk is the ability to customize your cuts. You can decide how thick you want your steaks, how much ground beef you’d like, and whether to include specialty cuts like short ribs or soup bones. We’ll work with you and our local processor to ensure your order meets your needs.
